1 1/2 cups cottage cheese
1/2 cup crushed pineapple
Drain pineapple and mix thoroughly with the cheese. Put in tray and freeze. Slice and serve on lettuce with mayonnaise.

Soft Molasses Cookies
Soft Molasses Cookies
1 cup shortening
2 cups molasses
2/3 cup brown sugar
Heat until melted and sugar is dissolved. Cool. Then add 2 beaten eggs.
Sift together 6 cups flour
1 tbsp. baking powder
1/2 tsp. baking soda
1 1/2 tsp salt
1 Tbsp. ginger
1 1/2 tsp. cinnamon
1/2 tsp. cloves
Combine all ingredients and chill. Roll about 1/4 inch thick and cut with a cookie cutter.
Bake on a lightly greased cookie sheet in a 375F oven approx. 12 minutes.
Cookies will be crisp. When cool, put in cookie jar. Cookies will soften over night.

2 cups cake flour
1/2 cup buttermilk or sour milk
1/2 tsp. salt
3 tsp. baking powder
1/2 tsp. baking soda
1/4 cup sugar
1/2 cup shortening
3 cups sliced fresh peaches
1/4 to 1/2 cup sugar
1 tsp. cinnamon
Sift flour, salt, baking powder, baking soda, and sugar. Cut in shortening until mixture resembles coarse crumbs. Add buttermilk or sour milk, mix until dough follows fork around bowl. Pat out in greased 8 inch square pan. Bake in moderately hot oven, 425F approx. 20 minutes.
Split hot shortcake. Fill and top with sliced peaches sprinkled with remaining sugar and cinnamon. Serve with cream, plain or whipped.

3 1/2 Cups sliced fresh peaches
1 recipe plain pastry
1/2 cup bron sugar
2 tbsp. flour
1/8 tsp. salt
1/4 cup butter
2 tsp. lemon juice
Place peaches in pastry lined 9 inch pie pan. Mix brown sugar, flour and salt. Add butter. Cook until thick. Remove from heat and add lemon juice. Pour over peaches.
Make lattice crust. Bake in hot oven 425F approx. 30 minutes

1 cup sugar
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. vinegar
2 to 3 Tbsp. coca powder
1 cup cold water
Sift flour, then make three wells. Mix well with a fork. Bake at 325F in a 13X9 ungreased Pyrex dish

Crema Soup

6 Tbsp. butter
Large onion, chopped
2 garlic cloves, minced
1 tsp. cumin
1/2 tsp.
2 cups half & half
dash white pepper
need salt
garnish with cheddar cheese

1 cup raisins
1 lb. prunes
4 whole eggs
1 1/3 cup powdered sugar
1 cup flour
1/3 Cup rum
2 cups milk
Soak raisins and prunes in 1 cup hot tea.
Bake 250F for 45 minutes
Cheese Ball
Cheese Ball
6 oz. blue cheese
2 5oz. jars cheddar cheese spread
4 3oz packages. Cream Cheese
2 Tbsp. grated onion
1 tsp. Worcestershire sauce
1/2 tsp. accent
1 cup ground pecans
1/2 cup chopped parsley (chop fine with scissors)
Put all cheese into a bowl and mix well (put into mixer bowl if you like)
Add grated onion, Worcestershire sauce and accent. Shape into a ball, mix parsley and pecans and roll into mixture. Place on a large platter and place crackers around.

1 Cup Chopped Onion
1 1/2 pounds ground beef
2 1/2 cups canned tomatoes
1/2 cup uncooked rice
1 tsp. salt
1/2 to 1 tsp. chili powder
1/4 pepper
1/4 lb. grated american cheese
Cook 10 minutes stirring once. Pour into a greased 8 square pan.
350 Degrees for 35 to 45 minutes
Jam Cake

6 eggs
3 cups brown sugar
1 Cup butter
4 cups flour
2 cups raisins; cut fine
1 Tbsp. all spice
1 Tbsp. clove
1 Tbsp. cinnamon
4 tsp. baking powder
1 cup nuts (walnuts are best)
1 cup jam
Sift and mix all dry ingredients (except sugar) together. Cream sugar and butter throughly. Add well beaten eggs, next add flour mixture then nuts and raisins. Bake in layers
COOK NOTES: This cake is very good to let sit for 3 or 4 weeks.
COOK NOTES: Lined pans with paper. Bake 300F with pan hot water underneath. Approx. 35 minutes
Frosting For Jam Cake3 cups brown sugar, packed
1 cup coffee cream
1/4 lb. butter
Cook 3 minutes. Let sit over night or until completely cold. Then put powdered sugar to make spreading consistency.

2 Cups Sifted Cake Flour
1 1/3 cup granulated sugar
2 tsp. baking powder
1 tsp. salt
1/2 Cup shortening
3/4 cup milk
1 1/2 tsp. vanilla
2 eggs, unbeaten
1 tsp. clove
1/2 tsp. nutmeg
1 Cup jam
1 cup raisins (cook makes a note of only using 3/4 cup)
Optional 1/2 cup nuts
Have eggs, milk and shortening at room temperature. Sift the first 4 ingredients into the mixing bowl, then drop in the shortening. Add about 2/3 of the milk, then the vanilla and beat a minute. Add the eggs, beating 2 more minutes. Add the remaining milk, beating 50 strokes, then the spices, jam, raisins.
Bake at 375 F for 35 - 45 minutes
Cook makes a note of baking in an 8X8X2 pans, noting it makes 2 large layers
